Chocolate Banana Protein Muffins {vegan & gluten free}

Around 3 or 4pm I get hungry and it's usually for something sweet! I knew exactly what I wanted to eat but I couldn't find an exact recipe for it, so I made my own! I am honestly so proud of myself because baking is hard! Sometimes even when I follow a recipe it doesn't turn out well, so I was pleasantly surprised when these turned out so yummy! I wanted something sweet and chocolatey, but healthy and full of protein. These are the perfect afternoon snack as well as dessert :)

Dry Ingredients:
1 cup GF baking flour
1 serving of chocolate protein powder (I used 2 scoops of Nuzest, but use any protein powder you have)
2 tbs coconut sugar
1 tbs cacao powder
1 tsp baking powder
1/4 tsp salt
dash of cinnamon
1/2 cup dairy free chocolate chips + a handful for topping (my favorite brand is EnjoyLife)
Wet Ingredients:
1 flax egg (1 tbsp ground flax seeds + 2 tbsp water)
2 soaked dates (I only soaked them for about 20 minutes but if you remember to do it an hour before that would be even better!)
2 ripe bananas
1 tsp vanilla extract
1/4 cup melted coconut oil
1/2 cup dairy free milk
2 tbs almond butter

Method:
Soak 2 dates in water for 20 minutes-1 hour. Mix together ground flax seeds and water in small bowl and set aside until thick.
Preheat oven to 350 degrees.
Sift the flour, protein powder, cacao, baking powder, salt and cinnamon into a large bowl so there are no clumps. Then add the coconut sugar and stir.
In a blender or food processor add all the wet ingredients. Blend until very smooth!
Then, add the wet ingredients into the bowl of dry ingredients. Stir until well incorporated. You might need to add a few splashes of dairy free milk if the mixture is too dry. It should be sticky and thick.
Line muffin tins with paper liners and/or spray them with coconut oil. Pour the mixture evenly into muffin tins and top each one with more chocolate chips.
Bake for 25 minutes, put a toothpick or knife through one to make sure it is cooked all the way through and no batter comes off on the toothpick/knife when you take it out of the muffin.
